Keep the food-service plan tied to the actual shutdown, meal volume, and reopening sequence.
First decision
Which food-service functions must continue while the permanent kitchen is closed?
From the original planning modules
What changes in this application
01 · Temporary kitchen trailer rental for renovation
Record the last day the permanent kitchen can serve meals and the first day it can serve them again. Count meals by service period, then identify which cold storage, dry storage, and serving spaces remain usable. Measure the pass-through between the temporary kitchen and the dining area before choosing a pad.
14 · Portable kitchen trailer demobilization
Plan the return trip while the construction schedule is still being set. Agree on cleaning, inspection, utility isolation, waste removal, pad restoration, and the handback date. Recommission the permanent kitchen before removing the temporary production capacity.
Site sequence
Work through the handoffs.
01
Before shutdown
Document the menu, meals per service, serving route, delivery windows, and the rooms that remain accessible. Ask the facility and local authorities which approvals apply.
02
During the work
Keep construction traffic and food deliveries on separate paths. Confirm who maintains power, fuel, potable water, wastewater, grease handling, and cleaning.
03
At handback
Test the permanent kitchen and agree on the date when food service transfers back. Schedule trailer cleaning and collection after that test.
